Obviously I shopped at Kroger, but any brand of these basic ingredients will do fine. We love extra cut okra in our quick easy vegetable beef soup, but if you are not a fan, just substitute extra veggies of your choice. You can also use fresh onion and garlic. I enjoy using dehydrated onions to avoid the chore of chopping and crying. They reconstitute nicely when added to the ground beef and such a time saver! This recipe is very low carb and the sodium (I LOVE SALT) can be reduced by using canned products that are labeled low sodium.
Grab a big ole stockpot and brown 2 lbs of ground beef with 1/2 cup of dried onion and a teaspoon of garlic.
We could call this dump soup because after the beef is cooked we just dump in the beef broth, tomatoes and veggies. Fill up one of the tomato cans with water and add to the pot. Sprinkle in some salt and pepper and let it simmer. This makes a pretty hefty amount of soup. My stock pot is 12 quarts and it fills it almost half way, so that is about 4-5 quarts of soup. You can also use 1/2 the ingredients to make less.
Serve with some crispy bottom cornbread and enjoy.
